Our extra virgin olive oil comes from the trees we grew up with in North Messinia, in the Peloponnese,  near Kalamata, a region long known for the quality of its olive oil.

The groves sit on hillside slopes, where the terrain, light, air, and natural drainage help shape olives with character, depth, and rich aroma. Made exclusively from Koroneiki olives, this oil is deeply connected to both its place and its variety.

We grow without herbicides or pesticides, and only take what the land can give without being pushed. To help preserve freshness, the oil is stored under nitrogen and temperature-controlled conditions, then bottled shortly before shipment.

Storage

Keep in a cool, dark place, away from direct light and heat. Close the cap well after each use, as oxygen gradually affects freshness.

  • Aroma: fresh-cut grass, herbs, green almond, and artichoke
  • Taste: lively fruitiness with a clean bitterness
  • Finish: warm, peppery, and lingering

Green and herbaceous at first, rounded and balanced in the middle, with a peppery kick that lingers pleasantly.

Best used over salads, tomatoes, legumes, vegetables, grilled fish, soups, roast potatoes, pasta, and warm bread with a little salt.

There is a difference between selling olive oil and making it. For us, the work begins long before harvest, in the quiet, unglamorous work of the grove: pruning, mulching, soil work, summer care, and all the little things that keep the trees healthy without shortcuts.
